Good Food Month brings you the Greco-Roman Affair, a collaboration between Mario di Natale of Perth’s hatted Garum, and Stefano Marano of Sydney’s celebrated The Apollo restaurant. Marano brought modern Greek to a new level in Sydney with The Apollo restaurant, this year ranked 30 in Australia’s Top Restaurants, and is Italian by birth. di Natale is also Italian – and knows great produce having come from a long line of Sicilian farmers. He honed his craft under Melbourne’s legendary Guy Grossi, and now focuses on contemporary Roman cuisine at Grossi’s only restaurant outside of the Victorian borders, Garum.
